An Argentinian classic: Chocotorta

Following our trip to Café Tortoni on Monday, Tuesday afternoon saw the Elebaires students having a go at making the traditional Argentine dessert, Chocotorta. Chocotorta is a decadent and delicious dessert, a staple at all special occasions, birthdays and fiestas. Martin, our teacher-turned-tour guide-turned- chef led the class with a mouth-watering grin on his face as this, he professed, is one of his absolute favourite dulce treats.
Chocotorta is incredibly simple to make. The only ingredients we used were dulce de leche, cream cheese, chocolate biscuits, chocolate milk and a sprinkling of ground espresso. Chocotorta has an interesting history – it was first made a mere 30 or so years ago in 1982 by Marité Mabragaña , who, whilst working for an advertising agency, decided to combine the products of her two clients – cream cheese and chocolate cookies. The rest, as they say, is history and Chocotorta is now a national favourite!
Martin gave us a masterclass on how to make the dessert. Firstly, dulce de leche was mixed with cream cheese in equal parts. The chocolate biscuits were then dipped in chocolate milk and used to line the bottom of the dish. Next came rather a generous layer of the dulce de leche-cream cheese combination, which was slathered onto the layer of chocolate biscuits. A sprinkling of ground espresso later, and the next layer was ready to be assembled! These 2 steps were then repeated until we finished our supplies! The Chocotorta needs to set in the fridge, in order for the layers to merge and set. This is when your limits of self-restraint are tested as resisting a quick bite of this heavenly dessert was not the easiest of challenges!
Although the less indulgent among us might find this dessert a little empalagoso it really is delicious! Different versions of Chocotorta can be created – some use coffee instead of chocolate milk, others prefer to use normal whipping cream, whilst all have their own favourite biscuits to use. However, whatever the combination, the dessert is bound to be delicious and will definitely satisfy that sweet craving!
